Sturgeon can be caught in the Mountain Lake during Summer or Winter from 6 a.m. to 7 p.m. Weather does not matter, so a clear day works. Use any eligible fishing rod except the Training Rod. Once you land the first fish, decide whether it should complete the Lake Fish Bundle or begin a Fish Pond that can produce roe for Caviar.
Check the conditions before casting

Cast away from the nearest shoreline when possible. Water farther from land can improve fishing-zone quality, though a long cast is not a guarantee that Sturgeon will bite. The fish has difficulty 78, while the Training Rod only hooks fish below difficulty 50.
Choose upgrades for the problem you have
The Iridium Rod becomes available from Willy at Fishing level 6 for 7,500g. It accepts tackle, but it is optional. Try your current eligible rod first. If Sturgeon keep escaping after they bite, a Trap Bobber can slow the loss of catch progress whenever the fish leaves the green bar.
A Trap Bobber costs 500g or can be crafted from one Copper Bar and 10 Sap. Buying both the Iridium Rod and one bobber costs 8,000g before bait or food. Fishing meals can temporarily enlarge the effective catch bar by raising Fishing skill. Dish O’ The Sea supplies a +3 Fishing buff.
Temporary skill buffs should not be treated as a way to unlock shop inventory. The official Stardew Valley 1.6.9 changelog records a fix for buffs affecting shop requirement checks. Reach the required base Fishing level before planning around the Iridium Rod purchase.
Use Magic Bait or shops as backup routes
Magic Bait ignores normal season, time, and weather restrictions, but the Mountain Lake location still applies. It is a later-progression option connected to Qi’s Walnut Room, so it will not help a new farm waiting for its first Summer or Winter window.
Krobus can carry Sturgeon in Wednesday stock for 200g. The Traveling Cart can also sell one for 600g to 1,000g. Both inventories are random. Treat a shop appearance as a shortcut, not a schedule you can rely on.
Decide how to use the first catch
The standard Lake Fish Bundle requires a Sturgeon. If Community Center progress is the immediate goal, donate the first one and catch another later. Check the bundle screen before committing if the save uses remixed bundles.
A Fish Pond is better when you want a renewable Sturgeon population and roe. Robin charges 5,000g, 200 Stone, five Seaweed, and five Green Algae. The building occupies a five-by-five area and normally takes two days to complete.
Sturgeon ponds begin with room for one fish. Their capacity requests progress from one Diamond, to either one Jelly, two Maple Syrup, or one Pickles, then three Omni Geodes, and finally one Nautilus Shell. Give the pond the exact item it requests. A Nautilus Fossil does not replace a Nautilus Shell.
Turn Sturgeon Roe into Caviar
Place Sturgeon Roe in a Preserves Jar. Processing takes 6,000 in-game minutes, commonly described as about four in-game days. The Preserves Jar recipe unlocks at Farming level 4 and costs 50 Wood, 40 Stone, and eight Coal.
Caviar sells for 500g, or 700g with the Artisan profession. It can also be used for the Missing Bundle. Pond output is random and jars need processing time, so the sale price does not translate into a fixed daily income. If a jar creates Aged Roe instead, the input came from another fish; Sturgeon Roe is the input that becomes Caviar.
